CHOCOLATE PEAR CAKE

INGREDIENTS

 

3 pears

1/4 cup of granulated sugar

1 tbsp of orange juice

1 cinnamon stick

1 2/3 cups of flour

3/4 cup of brown sugar

1/3 cup of unsweetened cocoa powder

1 tsp of baking powder

1 teaspoon of cinnamon

1/2  tsp of baking soda

1/2 tsp of salt

1 egg

1 cup of almond milk

1/2 cup of olive oil

1 tbsp of flour

1 tbsp of unsweetened cocoa powder

1/4 tsp of cinnamon

 

METHOD

 

  • In a large saucepan combine 2 cups of water with the 1/4 cup of sugar, orange juice & cinnamon stick. Bring to a boil, until the sugar has dissolved. Add the pears and simmer for 20 to 25 minutes, until tender. Remove from the heat, discard the liquid and let the pears cool.

  •  Preheat the oven to 175ºC and grease a loaf pan with coconut oil. 

  • In a large bowl combine the flour, brown sugar, cocoa powder, baking powder, cinnamon, baking soda and salt.

  • In a medium bowl whisk together the egg, almond milk and olive oil. Add to the dry mixture and whisk until smooth.

  • In a small dish, combine the tablespoon of flour, cocoa powder and cinnamon. Roll each pear in the mixture to lighlty coat.

  • Pour 3/4 of the batter in the loaf pan. Place the pears, stems side up. Pour the rest of the mixture around the pears. 

  • Bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then remove it and cool completely.

Baking time: 50-55 min
