CHOCOLATE PEAR CAKE
INGREDIENTS
3 pears
1/4 cup of granulated sugar
1 tbsp of orange juice
1 cinnamon stick
1 2/3 cups of flour
3/4 cup of brown sugar
1/3 cup of unsweetened cocoa powder
1 tsp of baking powder
1 teaspoon of cinnamon
1/2 tsp of baking soda
1/2 tsp of salt
1 egg
1 cup of almond milk
1/2 cup of olive oil
1 tbsp of flour
1 tbsp of unsweetened cocoa powder
1/4 tsp of cinnamon
METHOD

In a large saucepan combine 2 cups of water with the 1/4 cup of sugar, orange juice & cinnamon stick. Bring to a boil, until the sugar has dissolved. Add the pears and simmer for 20 to 25 minutes, until tender. Remove from the heat, discard the liquid and let the pears cool.

Preheat the oven to 175ºC and grease a loaf pan with coconut oil.

In a large bowl combine the flour, brown sugar, cocoa powder, baking powder, cinnamon, baking soda and salt.

In a medium bowl whisk together the egg, almond milk and olive oil. Add to the dry mixture and whisk until smooth.

In a small dish, combine the tablespoon of flour, cocoa powder and cinnamon. Roll each pear in the mixture to lighlty coat.

Pour 3/4 of the batter in the loaf pan. Place the pears, stems side up. Pour the rest of the mixture around the pears.

Bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then remove it and cool completely.
