1 cup of fresh almond milk
2 egg whites
1 cup of oats
1 tbsp of protein powder or maca powder
1 tbsp of peanut butter
1 pinch of baking powder
Mix all the pancake ingredients in a blender until smooth.
Heat a frying pan over medium heat, brush with a little coconut oil.
Drop heaped tablespoons of the batter into the pan and cook for 3 minutes, or until bubbles start to form on the surface.
Carefully flip and cook for a few more minutes, or until lightly golden.
Transfer and stack on a plate. Top with peanut butter, berries and honey.
